Originating from the Île-de-France region, Brie de Meaux is a traditional French soft cheese made from raw cow’s milk. It has been crafted for centuries near the town of Meaux, earning the prestigious AOC (Appellation d’Origine Contrôlée) status in 1980 — a guarantee of its authenticity and quality.
🧀 Characteristics
Brie de Meaux is creamy, smooth, and delicately bloomy under its thin white rind. Its paste is ivory-yellow and supple, with subtle aromas of fresh butter, hazelnut, and sometimes mushrooms as it matures. The flavor evolves from mild and milky when young to rich, earthy, and slightly tangy when fully ripened.
🧂 Production
The cheese is made using raw milk and undergoes a slow, natural fermentation, followed by surface ripening for at least 4 to 8 weeks. During this time, the Penicillium candidum mold develops the characteristic white rind that protects and enhances the creamy interior.
